The East Frisian tea ceremony
  1. Preheat the teapot and add a teaspoon of the East Frisian mix for every cup you want to serve. Then add an extra spoonful ‘for the pot’. Pour a little boiling water into the pot until the tea leaves are just covered.
  2. Leave the tea to steep on a teapot heater for 3 to 5 minutes then add enough water for the number of cups you want to serve. Pour the tea into another preheated teapot through a strainer. Place 1 or 2 pieces of Klüntje in each cup and then pour over the hot tea.
  3. Very carefully add a teaspoon of cream. Do not stir the tea; the rock sugar dissolves very slowly in the tea and can be used for several cups.
